5 Gallon Extract/Specialty Grain Recipe:

Malt/Specialty Grains Hops (pellets) Additives Yeast
3.3# Amber malt extract 1 oz Eroica (60 minutes) 1 Tbl. Yeast Nutrient Wyeast #1388 Belgian Strong Ale
3.3# Light malt extract 1 oz Cascade (30 minutes) 1 tsp. Irish moss  
1 # Light dry malt 1 oz Kent Goldings (10 min)    
2 #Belgian grain      
.5 # Wheat grain      
.5 # Special roast grain      
.5 # 20lv grain      

Directions:

Steep grains in nylon grain bags in 5 gallons of 155°F water for 30 minutes. Slowly raise the water temperature to 170° F. Remove grains from pot. Bring to a boil. Add extracts and Eroica hops. 30 minutes into the boil add the Cascade hops. Add Kent Goldings 50 minutes into the boil. Add yeast nutrient 45 minutes in to the boil, the Irish moss 50 minutes into the boil. Cool wort to approximately 70-75°F and pitch 1 pint of yeast starter. Ferment in primary for 4-7 days, secondary 7-10 days. Original Gravity 1.062 - Final Gravity 1.014. Percent Alcohol 6.54. Prime with 1 cup of light dry malt before bottling.

Comments:

This beer had a strong but not unpleasant after taste. Some friends found the high alcohol content to be a bit too powerful for them. The brewer felt it was fairly true to style.
